Macarons are traditional French sweets, a kind of cream-filled cookies, made with egg white, ground almonds, and sugar. Macarons are not only distinguished by their delicious flavor but also by their fantastic colors. If one day you travel to the beautiful city of Paris, the capital of France, you will surely run into these sweets in the stained glass windows of the bakeries.




Originally, the macaron was made without filling and ate one lid at a time like a crunchy cookie. In 1862, Louis Ernest Ladurée. a french miller who founded his own bakery began to make them with two lids and a jam or ganache filling in between. Ingredients Basic Recipe

1 egg 

40 grams of almond flour 

95 grams of  powdered sugar

15 grams of refined sugar 

 

  1. Bring water to a boil in a large pan. Place a deep glass bowl to steam and beat the egg white until it is at room temperature.
  2. Remove the pan from the steam and with an electric mixer beat the egg white until it is white and foamy. Add the refined sugar and beat until it is about nougat.
  3. In another deep bowl, first, pass the almond flour through a strainer and then the powdered sugar. Mix well and make sure there are no lumps.
  4. Add 1/3 of the flour and sugar mixture to the egg white and with a plastic spatula mixed with circular movements. Repeat with another third of the flour and mix and finish with the last third. Just mixed everything well to have a bright dough.

  5. Place the dough in a pastry bag with a small circular tip.
  6. Prepare a tray with wax paper and with the pastry bag, make small circles (2 cm apart). You should reach this mix for approximately 16 macarons lids.
  7. Let the macarons dry at room temperature for at least an hour. You know they are already dry when you touch them with the tip of your finger and they already have a hardcover.
  8. Heat the oven to 150 degrees Celsius and bake the macarons for 10 minutes. Lower the temperature to 140 degrees and bake for 2-3 more minutes.
  9. Remove from the oven and allow them to cool 3-4 minutes and separate very carefully from the waxed paper.
