The acidity and sweetness of the mango make it the perfect fruit to balance the taste of a gazpacho.

Take a large, ripe mango, wash and cut it into cubes, sprinkle it with a teaspoon of cayenne pepper and the juice of a lemon, let stand at least half an hour.

Take 4 large apple tomatoes, a fresh celery stalk, 2 red peppers, half a head of garlic and pass them through the blender with pink salt, fresh pepper, a tablespoon of coconut oil (cold-pressed), and half of our marinated mangoes.
