5 Romantic Date Night Meals for The Weekend




We like to think that your weekends are to give you a comfortable time at home, with your boyfriend, friends or anyone who makes you a pleasant company. However, it is Sunday and the body knows it, it is necessary to save energy for the following days of the week. Therefore, we have selected easy recipes for weekends from which you can take inspiration and thus have a romantic dinner at night.

1. Tomato Harvest Pasta with Shrimp

Tis’ the tomato season, and my wonderful parents have been giving me little gifts for the past few weeks from their garden. This is a slow roast sauce, it’s worth the time (mostly spent in the oven) if you have it. Simple and fresh tasting.




How to (2-4):
-Fill a small cast iron with 3 large tomatoes quartered, and 1.5c of cherry tomatoes covered in olive oil, with 3 garlic cloves, salt and pepper. If you have more tomatoes, then great, you can make, save, and freeze sauce
-roast tomatoes uncovered on 200F for 2 hours, & let them sit in oven to cool
-blend tomatoes and strain to remove seeds
-defrost shrimp, I use deveined, peel on for more flavor
-boil water and cook pasta as directed, I used chioccile, whole wheat noodles because they are curly just like the shrimp and are a little healthier
-add oil to cast iron, bring to medium heat and cook shrimp till pink, around 3 minutes a side, with salt, pepper, and paprika
-remove shrimp, add sauce and 1/4 minced onion to skillet, bring to simmer
-add 1TB tomato paste, 2oz goat cheese, and 2TB of Parmesan to sauce and work in for a creamy texture
-add noodles and shrimp back to sauce and toss
-serve with chopped basil, red pepper flakes and more Parmesan

Insanely delicious dinner idea for you to give a go on the weekend! Crispy gnocchi with a sausage meatball ragu – SO so good. Be sure to SAVE this post for later! Chris xx Crispy Gnocchi with Sausage Meatballs | Serves 2 INGREDIENTS ▫️14oz / 400g Gnocchi ▫️14oz / 400g Chopped Tomatoes (for best flavour I get plum tomatoes and chop them in the can, failing that just get good quality chopped tomatoes) ▫️6 Pork Sausages (preferably Italian style, but any variety will work) ▫️1/4 cup / 60ml Red Wine ▫️1/4 cup / 20g freshly grated Parmesan, plus extra to serve ▫️2 small cloves of Garlic, minced ▫️2 tbsp Unsalted Butter ▫️1 small White Onion, finely diced ▫️1 tbsp Tomato Puree (Tomato Paste in US) ▫️1 tbsp Olive Oil ▫️1 sprig each: Rosemary, Basil ▫️Few fresh Sage Leaves ▫️Salt & Black Pepper, to taste METHOD 1️⃣Squeeze out the meat from the sausage skins & roll 5-6 mini meatballs from each sausage. Place to one side. 2️⃣Pop your gnocchi in salted boiling for 2mins until they’re just about cooked through & the water is completely cloudy. As soon as the first piece of gnocchi floats to the top, drain in a colander. 3️⃣Melt butter in a pan over medium heat with a few sage leaves & add your gnocchi. Fry until crispy, shaking frequently. Season with salt & pepper then remove from pan. 4️⃣Fry meatballs in olive oil until evenly browned. Push to the outside of the pan & add your onion. Fry until soft and beginning to brown, then add your garlic & fry for a minute longer. 5️⃣Stir in tomato puree, then deglaze with the red wine. Simmer for a few mins to reduce down, then pour in tomatoes. Add a sprig of basil & rosemary, season with salt & pepper, then allow to simmer for 8-12mins. Once thickened, stir in your parmesan (add a splash of water if it thickens too much). 5. Healthy Grain-Free/Gluten-Free Charcuterie Board

Perfect for an appetizer or a light dinner!

INGREDIENTS

  • Paleo Blackberry Jam:
  • 1 cup fresh blackberries
  • Coconut Cream + Honey Dip:
  • 1 Tablespoon honey
  • 1 Teaspoon fresh lemon juice
  • 1/2 cup coconut cream
  • 1 Tablespoon honey
  • Charcuterie Board:
  • Simple Mills Original Sprouted Seed Crackers
  • Simple Mills Everything Sprouted Seed Crackers
  • Prosciutto
  • Green olives
  • Kalamata olives
  • Macadamia nuts
  • Pears
  • Micro-Greens (optional)
  • Goat Cheese crumbles (optional)
  • Red grapes
  • Green grapes

INSTRUCTIONS

  1. Paleo Blackberry Jam:
  2. Combine ingredients in small saucepan.
  3. Bring to medium heat and let simmer.
  4. Continue simmering until blackberries break down and it reduces into a jam.
  5. Add water, as needed, 1 Teaspoon at a time, if it gets too dry.
  6. Coconut Cream + Honey Dip:
  7. Place coconut cream in small bowl and drizzle honey on top.
  8. Charcuterie Board:
  9. Compile board as shown or any way you like!
