When your days get really busy and you need a dinner you can whip up in no time, foil-pack recipes will always save the day. They don’t take much prep or cleanup time—just toss your ingredients into aluminum foil with spices and oil, no pots or pans required—and they cook fairly quickly in the oven or on the grill.
Only problem is, it’s not always easy to find foil-pack recipes that don’t have meat in them. Many of the recipes available online are created with BBQ parties in mind, and stuffed with proteins like chicken, steak, and seafood. But foil-pack meals and sides can totally be an option for a quick, painless, meatless Monday (or everyday) dinner if you know where to look and use a little bit of creativity.
